Chopsticks and Sushi at Takamatsu Restaurant in Tucson, Arizona
I often find myself at Takamatsu, owned by Peter Koga, for lunch and dinner with my parents and girlfriend. We’ve been eating here for over 15 years and there isn’t a week that goes by without us stopping in for some sushi or korean food. I still remember my first bite of sushi and how I had to learn there was an appreciable texture to raw fish that is definitely confusing to the unfamiliar palate. Now I’m crazy for the stuff and there isn’t much I won’t try at least once.
While waiting for my parents one afternoon, I had my camera handy and asked Peter if I could take photos of the sushi chefs prepping meals for hungry diners. There is an artistry to preparing and cutting fish that is beyond my fair weather chef skills. My untrained fingers are simply incapable of filleting skin from fish and having it look presentable for dinner. Here’s a few photos I snapped to kill some time before lunch.
